Have you heard of Pancake Day? The proper name is Shrove Tuesday, and it marks the last day before the Christian fasting period of Lent. Pancakes were a good way of using up the butter and eggs that one had to give up over Lent. My favourite filling is simple lemon juice and sugar, but jam, fresh fruit, chocolate spread and honey are all popular too. I like ice cream on top of mine if I’m feeling reckless!
